Every coffee drinker has experienced the difference between great steamed milk and bad steamed milk, even if they cannot name what they are tasting. Great steamed milk is silky, slightly sweet, and integrates with the espresso into a smooth, unified drink. Bad steamed milk is frothy, dry, or scalded, and it ruins the drink regardless of how good the shot underneath it is.

What Is Microfoam?

Microfoam is steamed milk that contains thousands of tiny, tightly packed air bubbles, too small to see individually. The result is a glossy, fluid, paint-like texture that pours smoothly and integrates with espresso rather than sitting on top of it.

Microfoam is what separates a barista-made coffee from one made with a basic home frother or a milk pod machine. It is the ingredient that makes latte art possible and produces the silky mouthfeel that defines a high-quality flat white or latte.

Producing microfoam consistently is one of the most important skills in espresso-based coffee preparation. Once you understand the process, it is also one of the most teachable.

The Two Phases of Milk Steaming

Steaming milk has two distinct phases that happen in sequence. Understanding them separately makes the process much easier to learn.

Phase 1: Aeration (stretching). In this phase, you introduce air into the milk by positioning the steam wand tip just at or slightly below the surface. The air creates the bubbles that form the microfoam. This phase happens in the first 5 to 10 seconds of steaming and should be completed before the milk reaches 37°C (body temperature).

Phase 2: Integration (rolling). Once the air is incorporated, you lower the jug slightly to submerge the steam wand deeper and create a circular rolling motion in the milk. This phase heats the milk to your target temperature and folds the microfoam uniformly through the liquid. The result should be a smooth, glossy, homogenous texture with no visible bubbles or foam layers.

If you only do Phase 1 and stop, you get a jug full of frothy foam. If you skip Phase 1 and only do Phase 2, you get hot milk with no foam at all. Both phases are necessary.

Step-by-Step: How to Steam Milk Correctly

Step 1: Start with cold milk. Cold milk gives you more working time in the aeration phase before the milk heats up past the point where you need to stop adding air. Always start with refrigerator-cold milk.

Step 2: Fill the jug to the correct level. Fill the milk jug to just below the base of the spout. This gives the milk room to expand during steaming without overflowing. For a standard latte or flat white, a 600ml jug filled to the lower third is typical.

Step 3: Purge the steam wand. Open the steam valve for one second before inserting the wand into the milk. This expels any condensation that has collected inside the wand and ensures you are working with dry steam from the start.

Step 4: Position the wand for aeration. Submerge the steam wand tip just below the surface of the milk and angle the jug so the milk will spin in a circular motion when the steam is applied. The wand tip should be just off-centre and pointing slightly down.

Step 5: Open the steam valve fully. With a commercial steam wand, open the valve all the way. The steam should produce a hissing sound as it draws air into the milk. If you hear a loud screeching or squealing sound, the wand is too deep and not drawing in air. If the milk is splashing wildly, the wand is too high.

Step 6: Stop adding air at 37°C. Once the milk feels warm to the touch on the outside of the jug (around 37°C), lower the jug slightly to submerge the wand and transition to the rolling phase.

Step 7: Roll the milk to 60 to 65°C. Keep the circular motion going and let the milk heat to your target temperature. Most baristas judge this by touch: when the outside of the jug becomes uncomfortably hot to hold, you are close to 65°C. Use a thermometer until you can judge temperature reliably.

Step 8: Close the valve and wipe the wand. Once at temperature, close the steam valve, remove the jug, and immediately wipe the steam wand with a damp cloth. Open the valve briefly to purge any milk that has entered the wand.

Step 9: Tap and swirl. Place the jug on the bench and tap it firmly two or three times to pop any large surface bubbles. Then swirl the milk in a circular motion to integrate any remaining foam and check the texture. The milk should look like glossy, wet cream — no bubbles visible on the surface.

Pour immediately. Milk separates quickly after steaming, so pour within 10 seconds.

Milk Textures for Different Drinks

Different drinks require different foam levels, which means adjusting how much air you introduce in Phase 1.

For a flat white, introduce minimal air — the goal is a barely perceptible foam layer, fully integrated. The texture should be almost indistinguishable from the liquid below it.

For a latte, introduce slightly more air to produce a thin, consistent 5mm foam layer that sits gently on top of the poured drink.

For a cappuccino, introduce noticeably more air to build a thicker, denser foam cap that holds its shape above the rim of the cup.

Adjusting the amount of air you introduce takes practice and deliberate focus during the aeration phase. Most beginners introduce too much air for flat whites and lattes and not enough for cappuccinos. Conscious repetition fixes this faster than most people expect.

Common Mistakes and How to Fix Them

Large bubbles on the surface. This means the air bubbles were not small enough or were not integrated during the rolling phase. Tap the jug more firmly and extend the rolling phase. The next time you steam, try lowering the wand depth slightly during aeration to slow the air intake.

Milk that separates in the jug. This means you did not swirl before pouring, or the milk sat too long after steaming. Always swirl immediately before pouring and do not delay.

Scalded milk (too hot, bitter taste). Milk proteins begin to break down above 70°C. Scalded milk tastes slightly bitter and loses its natural sweetness. Use a thermometer until you can reliably judge temperature by touch.

Not enough foam for a cappuccino. You did not introduce enough air in Phase 1. Be more deliberate about keeping the wand at the surface level during the aeration phase, and extend that phase slightly.

Wand screeching during steaming. The wand is too deep and not drawing in air. Raise the jug slightly until you hear a hissing sound instead.

The Fastest Way to Improve Your Milk Technique

Deliberate repetition is the only path to consistent microfoam. Steam a fresh jug of milk, assess the result honestly, identify the one thing that went wrong, and correct that specific variable on the next attempt.

FAQ

What type of milk is best for steaming?

Whole dairy milk produces the most stable, glossy microfoam because of its fat and protein content. Reduced-fat milk can be steamed but produces less stable foam. For plant-based options, oat milk and barista-blend soy milk are the most reliable.

Can I make microfoam with a home steam wand?

Yes, though home steam wands produce less pressure than commercial wands. The technique is the same — the difference is that the aeration phase may take slightly longer and the texture may be less refined. Quality home machines from brands like Breville and De’Longhi produce workable microfoam.

Why does my milk taste sweet after steaming?

Lactose (milk sugar) becomes more perceptible when milk is heated to around 55 to 65°C. This is the natural sweetness that well-steamed milk has. Over-heating destroys this effect, which is why correctly temperatured milk tastes noticeably better.

How do I know if my microfoam is ready to pour?

The surface of the milk in the jug should be smooth, glossy, and uniform — no visible bubbles. When you swirl the jug, the milk should move as a single cohesive liquid, not separate into a foam layer and a liquid layer.

How important is steam wand position?

Very important. The angle and depth of the wand tip determines whether you are drawing in air (aeration phase) or rolling the milk (integration phase). Small adjustments make a significant difference. Most beginners benefit from marking the wand with a small piece of tape to find the correct aeration depth for their jug size.
